Snow Day Breakfast Burritos with Cuisinart®

As we wake up in the morning, my kids are only focused on one thing: playing in the snow. Nothing else matters. The bright, fluffy snow is like a wrapped present and they can't wait to play, sled and just be silly.

As a mom, I want to be out in the snow enjoying the beauty and playing like a kid. The last thing I want to do is spend hours in the kitchen making breakfast or doing dishes. To our family, a snow day breakfast is part of the magic when we are all at home together.

Thankfully, one of my favorite breakfast recipes can be made overnight thanks to Cuisinart®. Yes, that means we can have our delicious breakfast cooking overnight while the snowflakes fall.

The Cuisinart® 6-Quart 3-in-1 Cook Central® Multicooker really takes cooking to the next level for me. Not only is this slow cooker beautiful, but it makes cooking for my family super simple because it has three preset functions. You can saute, steam and slow cook - all with this one multicooker.  I also love the Keep Warm feature that automatically comes on once the cooking is complete, so you never have to worry about your food getting cold. And when your meal is over, the removable cooking pot is nonstick and dishwasher safe. You can also just place the main cooking pot directly in the fridge for leftovers. For someone who is not a fan of cleanup, I am completely in love. It is really versatile for a variety of recipes which is perfect for me (who loves to try new recipes in the kitchen).

So, let's get cooking with this delicious recipe. 

SNOW DAY SLOW COOKER BREAKFAST BURRITOS

Ingredients:

One dozen eggs

One package frozen potatoes

1 cup milk

One package sausage (or any other meat you prefer)

One package shredded cheese

One package soft shell tortillas

Extras:

Salsa

Sour Cream

Onions and Peppers

Directions:

  1. Sautee your sausage using the Cuisinart® Multicooker (remove temporarily when finished)
  2. Pour the bag of frozen potatoes in the bottom of the cooker
  3. Pour sausage on top of potatoes
  4. Whisk 12 eggs and milk in bowl and pour on top of mixture
  5. Cover and cook on low for 6-8 hours (great for overnight)

To Serve:

  1. Scoop the breakfast filling into soft shell tortilla. Add cheese and any extras you prefer. You can even set up a buffet for your kids to create their flavors.

After sledding, it’s the perfect breakfast for your kids, plus any friends or neighborhood kids that might stop by after an early morning of outdoor fun.
