Time To Enjoy Those Strawberries!

It's May and that means it's time for strawberries!  My family has always loved fresh strawberries and when they were young, going out and picking them was a great adventure.  Sure, you can go to the local grocery store and grab a pack or two -- still delicious.  But, there's something about fresh picked fruit that makes you realize there's a difference.  Around the Evansville area there are several places to go for straight from the garden strawberries:

Now how about a couple of ways to use those strawberries?  Here's two favorites in our house:

Strawberry Fluff

--One large box strawberry jello

--Two cups sliced strawberries

--One cup boiling water

--One cup ice

--One 8 ounce container Cool Whip

In a blender, pour in box of jello and add boiling water.  Blend on high setting for one minute.  Add ice and strawberries. Again, high setting for one minute.  Pour into bowl or shallow pan.  Fold in entire container of Cool Whip, using whisk to blend well.  Refrigerate until set.  Enjoy!

Strawberry Shortcake Parfait

--One pre-made angel food cake, cut into small pieces

--Two cups sliced strawberries

--One 8 ounce container Cool Whip

--One container Strawberry glaze (optional)

Using clear bowl, begin layering all ingredients. Cover and refrigerate until serving.  For an elegant presentation, prepare each "mini" parfait in individual clear cups or bowls.
